Steps

Wash tripe very well, and boil for 5 mins drain and wash again..

After washing pour into a pot add water, salt, bay leaf and boil again.

Grate garlic with scotch bonnet and set aside.

Mean while chopped onion, tomatoes, red bell pepper and keep

When the tripe is almost tender remove from heat and drain.

Place a pot on medium heat, add oil add the chopped vegetable and cook for 2 min, add grated garlic mixture and cook for another minutes.

Add tripe, garam masala, and curry.

Add in the stock, add seasoning cubes /salt to taste

Cover and cook till water reduce to about 1/2.

Reduce heat and cook when tender remove and allow to cool a little then serve
