Fill a bowl with water and squeeze in the juice of 1 lime. Peel off the tough outer layers of the banana blossom and discard the core and any small bananas inside. Use only the tender layers, slice them, and soak in the lime water to prevent browning. Squeeze out excess water from the banana blossom and place in a mixing bowl. Add all the seasonings and mix well until the mixture is sticky. Taste and adjust seasoning as needed, or fry a small piece to test the flavor. The mixture should be slightly spicy and a bit salty, as it will be served with dipping sauce.

Heat oil in a skillet over medium heat. Once hot, shape the mixture into patties and fry until golden brown and cooked through.

Remove and drain on paper towels. Arrange on a plate and sprinkle with crispy fried kaffir lime leaves. Serve with the spicy dipping sauce.

Banana Blossom Fritter Dipping Sauce: Mix 4 tablespoons water, 3 tablespoons granulated sugar, 1 tablespoon vinegar, 1/4 teaspoon salt, 2 tablespoons chili sauce, and 2 tablespoons roasted ground peanuts. In a small saucepan, combine water, sugar, and salt. Heat over low heat, stirring until the sugar dissolves. Add vinegar and chili sauce, and simmer until the sauce thickens slightly. Taste for a balance of spicy, sweet, sour, and salty flavors. Pour into a bowl and top with roasted ground peanuts.
