Ingredients

40 mins
10-20 servings
  • 1 (400 g)tin of chickpeas
  • 1onion
  • 2 clovesgarlic
  • 2 tspnutmeg
  • 2 tspground coriander
  • 2 tspsage
  • 2 tspthyme
  • 2 tspcoarse ground black pepper
  • 1 tspsalt
  • 200 gwheat gluten
  • 150-200 mlwater

Steps

  1. 1

    Finely chop and sauté the onion and garlic.

    In a food processor, blitz the chickpeas.

    Add the chickpea paste, onion and garlic, and other spices into a bowl with the wheat gluten. Mix well.

    Add in the water a bit at a time until the mix binds together and holds its shape. It'll have a tacky texture but you don't want it too wet.

    Divide into 10-20 pieces, depending on the size of sausage you want.

    Roll out each piece into a sausage shape and wrap up in foil. Twisting the ends like a sweet wrapper.

    Place in a steamer and steam for 40 mins.

Ah I’ve heard of seitan but not made it myself. Do you just buy a bag of ‘wheat gluten’? Is it like flour? I’m intrigued!!
