Last year during Christmas I planned something different something exceptional other than baking just an ordinary fruit cake . I planned making yule log cake which is originally a French recipe but I gave it a twist and here is the result ! It is essentially made of two sponge cakes one vanilla and the other chocolate . But I gave it a lot more effort to bring in the charm of an alpine region . How about thinking of a forest , a log is laid back there , there's a vine and wild berries over it , some orchids and mushrooms and obviously a pine or a Christmas tree ! All covered under a layer of snow ! I first imagined the whole scene then made it.

Ingredients

For 10/12 persons
  • For the vanilla sponge cake
  • 1/2 cupFlour
  • 1/2 cupSugar (powdered)
  • 2 tbsMilk powder
  • 2 tbsWhite oil
  • 1 tspBaking powder
  • 3Eggs
  • 1 tspVanilla essence
  • For the chocolate sponge cake
  • 3 tbsFlour
  • 1 and 1/2 tbsCocoa powder
  • 1/2 tspBaking powder
  • 1/2 tspCoffee powder
  • 2Eggs
  • 1/3 cupSugar (powdered)
  • 1 tbsWhite oil
  • 1 tspVanilla essence
  • 1/2 cupwhipped cream
  • 1 tbscocoa powder
  • 2 tbsChocolate syrup
  • 1 tbsWater
  • For chocolate ganache
  • 1/2 cupHeavy cream
  • 1 and 1/4 cup melted dark chocolate
  • 1/8 cupbutter
  • For decoration
  • 1 cup mixed with green colourWhipping cream
  • 6/7Meringue mushrooms (made by me)
  • 2Yellow coloured chocolate flowers
  • 6/7Cherries
  • 1Fondant pine / Christmas Tree (made by me)
  • 1/4 cupIcing sugar
  • as requiredSome nozzles and piping bags

Steps

  1. 1

    For vanilla sponge cake sieve flour baking powder, milk powder altogether

  2. 2

    Separate egg whites and yolks and take the whites in a mixing bowl and beat with the sugar in two batches with an electric blender to make a foam

  3. 3

    Add yolks oil essence gradually and keep beating

  4. 4

    Finally add the flour mixture in three batches and mix with cut and fold method with a spatula

  5. 5

    Grease the baking tray and pour the mixture

  6. 6

    Bake at a preheated oven at 180°C for 30 mins, take out the cake and cool down on a cooling rack

  7. 7

    For chocolate sponge cake sieve flour cocoa powder baking powder coffee powder altogether

  8. 8

    Separate egg whites and yolks

  9. 9

    Beat the whites to make a foam

  10. 10

    Beat the yolks separately

  11. 11

    Add sugar in 3 batches to the yolks and keep beating

  12. 12

    Add oil and beat again

  13. 13

    Add flour mixture in two batches and keep beating

  14. 14

    Lastly add the foam in 3 batches and mix with cut and fold process with a spatula

  15. 15

    Grease the baking tray, spread a baking paper and pour the batter

  16. 16

    Bake in a preheated oven at 180°C for 12 mins

    Take out flip over a cooking towel when it's hot, roll it over and keep it for 10 mins

    Mix the whipping cream with the cocoa powder

  19. 19

    After 10 mins spread the cream inside the cake and roll again

  20. 20

    Mix chocolate syrup with water and apply it over the cake and keep it in the fridge for 2 hrs

    Now it's time for the final decoration. Place the vanilla sponge on a board, cover it with green whipped cream

    Place the chocolate roll cake on the middle of it, cut two slices and place them beside as two branches

  23. 23

    Mix the heavy cream, melted chocolate and butter in a double boiler method and bring it down to the room temperature. ganache is ready.

    Cover the chocolate sponge with the ganache, scratch with a fork on it to give it a bark-like look

  25. 25

    Make some whipped cream grass with a grass nozzle and a piping bag all over the vanilla sponge

  26. 26

    Place some cherries on the chocolate sponge and make some whipped cream leaves with a leaf nozzle

  27. 27

    Make a whipped cream vine over the chocolate sponge with a fine tip nozzle

  28. 28

    Place yellow chocolate flowers and meringue mushrooms

  29. 29

    Place the fondant pine / Christmas tree

  30. 30

    Lastly dust some icing sugar over it to give it a snowy look. I've added a store bought Santa Clause doll to complete the charm !
