Place the 1/4 cup of brown sugar in a skillet and heat, stirring, until it melts and becomes liquid. You can decide how dark you want the caramel, but be careful not to burn it or it will taste bitter.

Pour the caramel into a baking dish or mold to cover the bottom. I personally like to use just a little, as it's mainly for flavor and appearance.

Place the mold in the refrigerator to cool. Meanwhile, add the remaining ingredients to a blender and blend until smooth. Take the mold out of the refrigerator and slowly pour the blended mixture over the caramel, pouring over the back of a spoon to avoid breaking the caramel layer.

Cover the mold with aluminum foil and cook in a water bath (bain-marie) for about 1 hour over medium-low heat.

To check if it's done, lift the foil and insert a toothpick or knife. If it comes out clean, the flan is cooked. This method also works for cakes.
