Ingredients

4 servings
  • 1garlic clove lightly crushed
  • 2.5 cmpiece of fresh ginger root peeled and cut into fine matchsticks
  • 2 tablespoonssoy sauce
  • 1 tablespooncider vinegar
  • 75 gshiitake a button mushrooms, stalks removed and thinly sliced
  • 2large spring onions thinly sliced diagonally
  • 40 gfine noodles of your choice
  • 175 gChinese leaves shredded
  • 1few fresh coriander leaves

  1. 1

    Pour the stock into a saucepan, add the garlic and ginger, soy sauce and vinegar.

  2. 2

    Bring to the boil, then cover the pan and reduce the heat to very low. Leave it to simmer gently for 10 minutes

  3. 3

    Remove the garlic clove from the pan and discard

  4. 4

    Add the sliced mushrooms and spring onions and bring the suit back to the boil simmer for 5 minutes and covered stirring occasionally

  5. 5

    Add the noodles and shredded Chinese leaves and simmer for 3 to 4 minutes or until the noodles and vegetables are just tender

  6. 6

    Stir in the coriander leaves simmer for a final 1 minute then serve the soup
