In a deep bowl, beat the 2 egg whites and the whole egg. Dice the green bell pepper, onion, and ham, then mix them with the eggs. Add the chopped spinach as well.

Pour the mixture into a skillet, shaping it into a round omelette. Let it cook on one side. Add salt to taste. When it looks ready, fold the omelette in half like a taco. Let it cook through.

When the omelette is done, serve it on a plate and garnish with a few slices of tomato and some parsley. Enjoy!
