Got a bag of manky potatoes in the cupboard? Turn them into tasty greasy crispy carby rosti. WARNING: requires a very fancy straining bag. You can use a sock or a pair of tights if ur feeling adventurous.

Peel ur potatoes. Compost the peelings otherwise I’ll compost you.

Grate the potatoes into the straining bag. I’ve used a loose muslin bag, but you could use a tea towel, an old sock, a pair of tights, whatever. Just wash it first.

Squeeze out the juice. Depending on your appetite for gastric flu you could keep this and ferment it into an elixir of youth.

Sounds weird, but microwave the grated potato for 30s - 1 minute. This takes more of the liquid out and helps them crisp up in the pan. Then mix in the salt and pepper

Mould the gratings into patty-sized Er... patties. Then fry them off until they’re brown and crispy on the outside. Takes around 5 mins each side on a medium heat.
