Boil potatoes and allow to cool,remove skin n mashed the potatoes.

Crack 2 eggs n separate egg yolks from white,and keep egg whites aside.add the yolks +1 egg to the mashed potatoes together with remaining ingredients except hard boiled egg,flour,veg oil n vermicelli.

Incase it turns out too soft n sticky,add 2tbsp flour n use your hand to shape into balls,press the center lightly to get the shape of a cutlets.

Roll into flour, do the same for the remaining and keep aside. -Roll in vermicelli. -Dip in egg whites -Heat veg oil and deep fry cutlet till crispy and golden brown. - Place small pieces of hard boiled egg in the center and serve.
