Chicken Breast in Green Sauce

With this sauce, I once prepared it with shredded turkey as well. I would have my meal ready a day in advance so that when I got home from work, I just needed to heat it up. My son was 12 years old and it was a struggle to get him to eat. That day, when I got home from work, I was surprised to find that he and one of my nephews who was visiting had eaten all the food. My husband and I were left with nothing. My late father used to say, 'Make that meal more often,' 😂😂. So, here's to my son (Roge) and my nephew Miguel, this meal is for them.
Chicken Breast in Green Sauce

Cooking Instructions

Boil the chicken breast in a little water with a clove of garlic. Once cooked, shred it and set aside.

Wash the vegetables thoroughly, chop them into small pieces, and boil them in a little water (jalapeños, tomatillos, onion, and garlic).

Blend them with the remaining water and add the chicken bouillon or salt and the bay leaf.

Pour the mixture into a pan and let it boil for 5 minutes. Then add the shredded chicken, let it cook for one more minute, and turn off the heat. It's ready to serve.
