‘Gomamiso-ae’ Brussels Sprouts & Chicken

How do you cook Brussels Sprouts? Roasting is probably the most popular method, I guess. Pan-frying is also good. I like pan-fried spicy Sprouts. I would cook with Bacon or Pancetta. Today, I am sharing a Japanese recipe, that is ‘Gomamiso-ae’. ‘Gomamiso-ae’ Sauce is similar to ‘Goma-ae’ Sauce. As you can see, it has ‘Miso’ in it. The sauce is thicker and richer, and surprisingly good with Sprouts.

Toast Sesame Seeds and grind until aromatic. Add Miso, Sugar, Mirin, Soy Sauce and Ginger, and mix well to make sauce.

Tear Chicken Breast Fillet into 2 to 3 pieces so that it will cook quickly. Place Chicken in a heat-proof bowl, season lightly with Salt, cover with a plate, and cook for 1 minutes, turn over and cook for 1 more minutes (or less) until cooked. When cool enough, tear into strips.

Clean and trim Brussels Sprouts, and cut them in half. Cook in the boiling salted water until soft. Drain and cool.

Combine Chicken and Brussels Sprouts with the sauce.
