Yummy Dry-Fried Chicken Gizzard #gizzardrecipecontest

While growing up, I remember I used to stay at the kitchen with mum and see her cook Kienyenji chicken. I would sacrifice watching TV or playing with my kid siz in the tableroom. You know why? Because being around mum the chicken liver,heart, and gizzard were reserved for people in the kitchen. There's no one instance that the gizzard made it to the dining table. Now as a big boy in my bedsitter and in the harsh economic times i afforded 250 gm Chicken gizzard from Maathai Supermarket Embu. The good thing about shopping for gizzard is that you don't have to nag the butcher with the common rant and lie ,"usiniekee mifupa..niko na shida ya meno"(please Mr.Butcher man, i need no bones in my meat, I got bad tooth.

Steps

Remove excess fat and wash then well, then chop them to your preference. [I wash in salty warm water].

In a bowl add the cleaned and chopped gizzards and mix together with half of the worchestire sauce (the sauce is cousing to soy sauce, i love its unique savory richness in meat dishes). Let it rest for 5 minutes.

In a pan or cooking pot on high heat, add oil till hot. Add the gizzards and let them cook till they brown. Reduce the heat when they are evenly browned.

Add the red onion, dania stalk, and the remaining minced garlic and let them sautee till fragrant.

Add the diced tomatoes, tomato paste, carrots and the spices (paprika, curry powder, chicken bouillon cube, and remaining worchestire sauce) and allow to cook till tomatoes soften. You may add little water to prevent the dish sticking to the pot.

Add the green bell pepper, the chilli and salt and let the bell peper cook for 2 minutes.

Garnish with chopped dania leaves, stir and turn of heat.

Serve while hot with accompaniment of your choice(Ugali, Rice, Mashed potatoes, Mukimo e.t.c)
