To prepare the batter, in a bowl add the onions, potatoes and fenugreek leaves, cumin powder, coriander powder, salt, all spices (garam masala), red chilli powder, gram flour and the canned tomatoes. Mix well.

If the batter is still dry, add tiny bit of water and keep mixing and checking the texture of the batter.

In a deep pan, add enough oil and make it hot. Taking table spoons of the batter, add them in the pan turn by turn. Make sure each table spoon that you add in the pan does not over lap the previously added table spoon of pakora.

Cook the pakoras till each side is dark brown and fully cooked. Serve with ketchup or chutney.
