Mix oil and boiling water and set aside

Beat eggs and sugar until white and fluffy

Add in essence and colouring and mix in

Fold in sifted flour and baking powder(use metal spoon)

Lastly fold in oil and water mixture

Pour into lined baking trays and bake in 180° oven for +-25minutes or until done

Allow to cool and decorate with ganache and mint chocolates! Enjoy!
