  1. 2.2 poundsbeef (such as brisket or chuck)
  2. 1large piece of beef fat (ask for it at the butcher)
  3. 5bay leaves
  4. 1/2onion
  5. 2dried ancho chiles
  6. 5dried guajillo chiles
  7. 4cloves
  8. 1 teaspooncumin
  9. 1 pieceginger (about 1 cm)
  10. 1 clovegarlic
  11. salt to taste
  12. as neededoil
  13. as neededtortillas
  14. For serving:
  15. chopped onion to taste
  16. chopped cilantro to taste
  17. radishes to taste
  18. limes to taste
  19. tomato salsa to taste

Cooking Instructions

    In a pot with water, cook the beef and fat with half the onion, bay leaves, and salt.

    Once cooked, chop or shred the meat and set aside.

    In the same broth where the meat was cooked, soak the ancho and guajillo chiles (seeded and deveined) for 15 minutes. Once hydrated, blend them with a little broth, garlic, cumin, cloves, ginger, and salt.

    In a hot saucepan, add a little oil and the chile mixture, add one more cup of broth, and let it boil for 10 minutes.

    Then add the meat and fat and let it simmer for 15 more minutes so the meat absorbs the flavor.
