Prepare the ingredients and wash the cucumbers.

Wash and peel the carrots.

Slice the cucumbers and carrots thinly.

Prepare the shredded ginger.

Add the shredded ginger to the cucumbers and carrots. Sprinkle with 3 tablespoons of salt, mix well, and let sit for 10 minutes to draw out excess water.

Prepare the rice vinegar and sugar. Squeeze the excess water from the vegetables, then mix them with the vinegar and sugar dressing.

After mixing, transfer to a clean glass container and refrigerate to keep it fresh and tasty.
