Langostines in a spicy tomato and prosecco sauce

Prep the langostines. Wash well and dry well using kitchen paper. Cut each one from head to tail using scissors

Fry garlic in a little olive oil. Add tomatoes and cook for 2-3 mins. Add a sprinkle of breadcrumbs and cook for 1 more min.

Add langostines and prosecco. Let it evaporate. Mix well. Cover and cook on medium heat for 8-10 mins. Stir occasionally. Add salt and chilli to taste. Remove garlic

Serve as a starter or main course with bread. Eat with hands. Knife and fork not recommended :)
