I learned not to add too much water to the sauce so it turns out delicious.

Place the meat in a pot with the oil and brown it. Add the grated onion and cook together. Add the grated tomato and garlic, and let them cook. Then add the spices, chickpeas, and tomato paste. Pour in a generous amount of hot water, cover, and let it cook. When the meat is almost done, add the vegetables and continue cooking.

Meanwhile, rinse the couscous and let it drain. Prepare a pot with boiling water.

When the couscous is dry, add 1 tablespoon of oil and steam it.

Once it starts to steam, transfer it to a large bowl and sprinkle with water and salt until the grains swell and absorb the water. Steam it a second time.

When it starts to steam again, remove it, fluff with your hands, and add 1 teaspoon of butter or olive oil.

Place the couscous on a serving dish, pour the sauce over it, and enjoy!
