Ingredients

Makes about 1/2 cup
  1. 1 tbspolive oil
  2. 1/2small red onion, peeled and finely chopped
  3. 2 cmchunk ginger, peeled and grated
  4. generous pinch of mustard seeds
  5. 1/2 cupgooseberries, top and tailed
  6. 1 tspbrown sugar
  7. 1 tbspapple cider vinegar
  8. seasalt

Steps

  1. 1

    In a pan, heat the oil and sauté the onion until soft - about 10 mins.

    Add the mustard seeds and ginger. Stir for 1 -2 mins.

    Add the gooseberries, sugar and vinegar. Stir. Then cook on a low heat for about 15mins - until the berries are soft.
