Ingredients

1 serving
  • 1 Bowlcooked rice (White / Brown as per personal preference)
  • 1/2 cupgreen peas
  • 1/2 inchcinnamon stick
  • 3-4green cardamom pods
  • 4-5black peppercorns (personal preference)
  • 3-5black cloves
  • 1/2 teaspooncumin seeds
  • 1 teaspoonclarified butter (ghee) or oil (personal preference)
  • 1small sized onion finely chopped (personal preference)
  • 3-4garlic cloves finely chopped (personal preference)
  • 3-4green chillies finely chopped (personal preference)
  • 1 teaspoonsalt
  • 1/2 teaspoonblack/white pepper powder (as per taste)
  • 1/2 teaspoonsugar

  1. 1

    Prepare the rice of your choice right white or brown. It's better to have it prepped the previous day or even left over rice from the previous meal can do wonders. Incase you're using leftover rice from the fridge, bring it down to the room temperature before use.

    Heat clarified butter (ghee) or oil in a wok pan or a kadhai. Add just half the prescribed quantity, in this case just add 1/2 teaspoon for now. Ghee is definitely a better option owing to it's benefits, it aids in skin glow and moisture.

    Add in the whole spices that's cumin seeds, crack open green cardamom pods before adding them, and the cinnamon sticks. Allow to release the flavours in a simmering heat.

    Roughly tear up the bay leaves and add it in along with some cloves and black pepper corns. It's absolutely optional to add in the black peppercorns, the substitutes include green chillies and pepper powder.

    Add in some cashews or any other nuts of your preference.

    This step is purely optional where you need to add in onion, garlic and green chillies.

    Saute every thing thoroughly on medium flame for 3 minutes and add in the green peas. Frozen peas can also be used but it needs to come down to room temperature before use. Cover the lid and let it sit for 5 mind on lower to medium flame for the flavours to be infused

    After 5 minutes, open the lid. Give it a stir and add in the rice and mix well. Add in the Salt at this moment, black pepper powder as per preference and the remaining 1/2 teaspoon of ghee as well as the 1/2 teaspoon of sugar. Serve hot.

Chopped mint or coriander leaves can be added too or even a dash of lime.
