Cheese Spread or Dip

Party special.
I wanted a cheese spread for crackers. Something easy, yet taste good. This recipe can be changed in many ways to meet your tastes. Chop some jalapenos, it's spicy. Use other cheeses, I love it with Swiss, Gruyère or Asiago. Any cheese with some flavor works very well. I would not consider this a dip, chips would crumble at the heavy texture.

Steps
- 1
I used this cheese this time, mostly because I wanted to try it (It's pretty good). But others work just as well. I think Swiss is still my favorite.
- 2
If it is block cheese, grate it, and place in a bowl.
- 3
Chop your green onion, smaller is better. Add to cheese in bowl.
- 4
Ready your onion. I like to thin slice it. I'm using a sweet onion here, red works great and adds a little color also.
- 5
Then finely chop it. A small dice works better in this. Add to bowl when you are satisfied.
- 6
Add your garlic powder to the cheese in the bowl.
- 7
Add your mayo to the bowl, stir it all together.
- 8
Serve on crackers, bread, toast, celery, relish plate or what have you.
