Amaranth leaves Stir Fry is a very simple recipe with simple and minimum seasoning. Amaranth leaves is a very nutritious green leafy vegetable and a diabetic friendly too. Include this in your meal and make the meal wholesome.

Wash the amaranth leaves thoroughly in water. Chopped the leaves along with tender steam. Chop green chillies and garlic too.

Heat oil in a pan. Add chopped green chilli and garlic and saute for a min.

Add the chopped amaranth and season with salt.

Mix well and stir fry in high heat for 10-12 mins.
