Easy Chicken Satay

Chicken satay is one of the most well-known recipes in Thai cuisine, but like many Asian recipes, it can be a bit labor-intensive. This is my own adaptation of the recipe that yields great results and has the big advantage of being made in a flash. You can make skewers or simply cook the fillets as they are.

Prepare the marinade in a bowl with all the ingredients, mix very well, and pour over the chicken fillets. Cover and let sit for a good while - at least an hour, and preferably longer.

Heat a griddle or skillet with a little oil, just enough to prevent the fillets from sticking.

Cook both sides of the fillets over medium-high heat - place the cooked fillets on a plate and keep them warm in the oven until all are done.

Once all are cooked, pour the marinade left in the bowl into the skillet, turn the heat to very high, reduce it, and pour over the fillets.

Serve hot with long-grain rice, preferably basmati.
