Cava Sangria

We just enjoyed a wonderful vacation in Portugal and, as we usually do when we travel, we took the opportunity to go on some food adventures. We had this sangria at a beach bar and it was a real revelation—absolutely delicious!
I'm not usually a big fan of sangria, but both this one and the white sangria (see Penchi's recipe collection for that recipe) were so excellent that I wanted to share them here. As I mentioned, Penchi has a recipe for sangria with white wine and I recommend you all try it. Montse also has a recipe for cava sangria (which must be delicious too), but this sparkling sangria is lighter and uses different fruit.
This sangria is gluten-free since it only contains fruit, soda, and cava; just make sure to use powdered sugar that is certified gluten-free and free from cross-contamination.

Cooking Instructions

Cut the fruit (except the mixed berries) into bite-sized pieces.

Place all the fruit in a pitcher.

Add the powdered sugar and stir gently.

Pour in the cava and lemon-lime soda (the restaurant used Sprite, but you can use any lemon-lime soda).

Add the ice and stir gently. The longer it sits in the pitcher, the more the fruit flavors will infuse.

A few notes:For this recipe, you can use the white wine of your choice. It has some great flavors added, so I generally go for the cheapest bottle I can find.You can use white grape juice or apple juice in place of the sparkling cider, but it's always nice to have a bit of fizz.Any variety of apple will do, but gala apples, or even pears, go very well in this recipe.Smash the grapes over the pitcher with your fingers so any juices will be added to the sangria.I use two of ounces brandy for a lighter version, but you can double the amount for something stronger. I wanted to make sangria with additive-free wine and organic fruits.Banana makes sangria cloudy, but also very tasty. If you'd like your sangria to stay transparent, omit it (I tried to wrap banana with parchment paper this time as an experiment). Add mango or papaya (these tend to be a bit expensive, so frozen ones are okay) for a tropical flair. A simple Cabernet Sauvignon would be ideal for this. Basically, though, you can use any kind of wine because you add lots of fruits anyway. Whenever you open a new bottle and you don't like it, try making it into a sangria.
