Sweet Gachas (Spanish Porridge)

Cut the day-old bread into small pieces and fry them in olive oil. Remove and place them on a plate lined with paper towels to absorb excess oil.

Add the tablespoons of olive oil to a deep skillet and toast the anise seeds. Add the flour and toast it lightly.

Once the flour and anise seeds are toasted, add the water and use a fork to dissolve the flour in the water to help prevent lumps.

Add the milk, sugar, and a pinch of salt. Stir well to remove any lumps of flour. For a smoother texture, you can use a hand blender briefly. Stir constantly over low heat to prevent sticking. When the mixture thickens, remove from heat and let cool.

Once cooled, top with the fried bread croutons and sprinkle with cinnamon and sugar.
