Roadside Dhabas are such a breath of fresh air in the era of posh restaurants and fine dining. They are one of the main attractions we love to go on road trips. The aloo de parathe, lassi, chicken bharta, naan are absolutely lip smacking! Chicken bharta and naan are my patent food I go for whenever I am in a dhaba.
Because kiddos schooling and other curriculum have kept us totally hooked we had to cut down our trip spree this year. That eventually made me try out dhaba style of chicken bharta . The is recipe of dhaba style chicken bharta is a no fail recipe and the only patience I show while making it is when I am shredding the chicken with a fork. Else it is quite easy to make. Clean well 500 grams of chicken breast pieces and cook them with 1 cup water in a pressure cooker till the cooker releases 3 whistles. Let the cooker de seal on it's own and with the help of a spoon gently place them on a plate. Shred the chicken pieces nicely while it's still hot and keep it aside.

In a nonstick pan heat a cup of white oil and add whole garam masalas (4 green cardamoms, 5 cloves, 1 inch cinnamon) and as it stutters add 2 finely chopped onions. Fry them well till they become soft. Add 1 big tomato chopped and saute well till they tenderise. Add 2 tablespoons of ginger garlic paste and cook well for 10 minutes. Add salt as per taste and 2 teaspoon of turmeric powder. Cook well. Add 1 teaspoon sugar and cook covered till the vegetables looks like a mishmash.

Add the shredded chicken and saute well in low flame for 2 minutes. Make a paste of half cup yoghurt and a handful of cashew nuts. Add the cashew yoghurt paste and saute well. Add water if required and saute well. Mash 1 boiled egg yolk only and add it to the chicken. Cok for 5 minutes in low flame till oil leaves the sides. Serve with boiled eggs.
