Ingredients

12 servings
  1. -----------casserole-------------
  2. 2 cupsbutter crackers, I used Ritz Crackers
  3. 1-1/2 cupspotato chips, I used Ruffles with ridges brand
  4. 1large egg
  5. 1 headcauliflower
  6. 1 poundcarrots
  7. 1 cupchicken broth
  8. 2 cupswater
  9. 1 cupparmesan cheese, grated
  10. 16 ouncesCarbonara sauce
  11. -----------chicken first cooking-------------
  12. 1 tablespoonred pepper berries or black peppercorns
  13. 1 teaspoonsaffron
  14. 1 teaspoonsalt
  15. 1 teaspoongranulated garlic powder
  16. 3large chicken drumstick
  17. 3large chicken thighs
  18. 1large banana leaf omit if you cannot get it
  19. 1/4 cupground paprika
  20. 1 teaspoonsaffron flowers
  21. ------------toppings----------------
  22. 1-1/2 tablespoondehydrated onions
  23. 3 tablespoonschopped parsly

Cooking Instructions

    The day before preheat oven 350 degrees Fahrenheit.

    Season the chicken and wrap in banana leaves and bake 1 hour.

  3. 3

    Set in refrigerator along with the juices of chicken, over night.

    Day of making casserole, preheat oven 390 degrees Fahrenheit

  5. 5

    Take the chicken off the bone and mice / cube the chicken set into a big bowl

  6. 6

    Cut the cauliflower up and add to chicken

  7. 7

    Slice the carrots up and add

  8. 8

    Crush the crackers and chips up and mix with the water

  9. 9

    Grease a 9x13 pan with the butter if you have any butter leftover leave in the pan

  10. 10

    Mix the cracker mixture with the chicken mixture, chicken broth, adding carbonara sauce, cheese, and egg

  11. 11

    Spread the mixture in the pan. Sprinkle the onions and parsley out over the top. Bake in the oven for 1 hour uncovered

    Let sit for 10 minutes and serve. Hope you enjoy!
