This is a very fine recipe for Cobbler just make sure you use fresh ripe peaches. The recipe was originally for a double crust and at the last minute I decided not to do that this time....also decided to go with a longer more shallow dish so that is why the crust are in two pieces😋😋 #peach #cobbler #southern

Ingredients

90 minutes
8-10 servings
  1. For the crust
  2. 2 1/2 cupsall-purpose flour plus more for shaping and rolling
  3. 1 tablespoonsugar
  4. 1/2 teaspoonsalt
  5. 12 tablespoonscold unsalted butter, cut into small pieces
  6. 4-6 tablespoonsice water
  7. For the filling
  8. 10-12just ripe peaches, peeled pitted and sliced 1/2 inch thick
  9. 4 tablespoonsunsalted butter
  10. 1/2 cupwhite sugar plus more for sprinkling
  11. 1/2 cuplight brown sugar
  12. 1 cupwater
  13. 1/4 teaspooncinnamon
  14. juice of fresh lemon
  15. pinchkosher salt
  16. 3 tablespoonsall-purpose flour
  17. 2 teaspoonsvanilla extract
  18. 2 tablespoonsheavy cream

Cooking Instructions

90 minutes
  1. 1

    Crust- Place flour, sugar, and salt into food processor and process for 5 seconds

  2. 2

    Add butter and process until the mixture resembles coarse meal

  3. 3

    Add ice water a few tablespoons at a time, until the dough just comes together

  4. 4

    Remove dough and knead lightly on a lightly floured surface until it just comes together

  5. 5

    Form dough into a disk and wrap with plastic wrap

  6. 6

    Refrigerate for at least 30 minutes

    Peach Filling- Squeeze lemon juice over sliced peaches, toss and set aside

  8. 8

    Melt butter in a large pan over medium heat and add the sugars and water and cook till dissolved

    Add cinnamon, salt, peaches, and flour, stir and cook for 10 minutes

    Take off heat and add 2 teaspoons vanilla and stir

    Preheat oven to 375 degrees F

    When dough is chilled remove from fridge and roll out to 1/4 inch thick

    Place peach mixture into a 13x9 buttered, glass baking dish and place the dish onto a baking sheet to protect your oven from any juices that spill over

    Place dough on top of peach mixture, brush the top with heavy cream and sprinkle with sugar also cut some slits to let out steam

    Bake until golden brown and juices are bubbly

    Let cool at least 30 minutes before serving......ENJOY !!! 😋

    You can substitute cooking spray for the bottom of the dish instead of butter !! 😋
