In a pressure cooker, add the chicken, onions, oil, and spices. Sauté them together, then add the vegetables, chickpeas, and tomato paste.

Add the celery and enough water to cover. Close the cooker and cook until done.

Meanwhile, moisten the couscous and steam it twice. Add salt before the second steaming, and steam a third time until fully cooked. (See previous recipes for detailed steaming instructions.)

Once the couscous is cooked, mix in the clarified butter and raisins, then place it in a large serving bowl.

When the broth is ready, strain the vegetables and add the broth seasoning. Bring to a boil, add the sugar, and pour the broth and chicken over the couscous in the serving bowl.
