Measure all the ingredients and put them in one bowl

Gently add some warm water and mix with fork as you dissolve the sugar

Once the dough has loosely come together,start to knead with your hands for 10 or more minutes to make the dough soft and elastic

Once the dough is soft and semi stretchy,let your dough rest.place it in a bowl greased with very little oil so that the dough doesn't stick. Let it rest for 10 mins

Divide the dough into balls as this depends on the size of mandazi you want

Dust the working surface with flour and roll out and cut into whatever shape you fancy.I cut mine into circular shapes by rolling the dough into a circle and cut it with plastic cup to give me a circular shapes

Deep fry in hot oil until golden brown on all sides

Drain and serve warm
