Osmanthus Sugar Syrup (糖桂花)

Osmanthus flowers tea is a class of its own with a very distinct fragrance. It also has calming effect for a tired soul.
It is a good choice to pair with Chinese dim sum or a Chinese meal.
You can use this syrup as a sweetener to replace honey. Or you can stir 1-2 tsp of this syrup in hot water to make an osmanthus flower tea.

Layer osmanthus flowers in the sterilised glass container.

Layer sugar over the dried osmamthus flowers.

Repeat the layers ending with sugar. Screw the cap and placed at a cool corner of the kitchen.

Once the sugar turn into a thick paste, put it in the refrigerator. It may take weeks, depending on the temperature and humidity of your location.
