My partner is originally from the North, so I make this dish from time to time to help with homesickness ❤️

Finely chop the carrot, kohlrabi, and green onions.

Soak the dried glass noodles and wood ear mushrooms in warm water until soft, then rinse and finely chop them as well.

Mix all the ingredients together. Add black pepper, 1 tablespoon fish sauce, a little MSG, and a pinch of sugar (don’t add too much sugar or the rolls will burn when frying).

Roll the filling into spring rolls, making sure not to wrap them too tightly so they cook evenly. I use thin rice paper wrappers made for spring rolls, but if you can’t find them, you can use rice paper for fresh rolls—just dip them briefly in water before wrapping. They’ll still taste great.

Place the spring rolls in the refrigerator for 15 minutes, then fry them.
