Steps

Take 1 cup of refined flour in a bowl 1/2 cup boiled grated potatoes,salt, carom seeds and 2 tbsp oil,mix all the ingredients together and knead the dough to be stiff.

Add 1 tsp water to the dough and knead a stiffer dough.

Now cover the dough and keep aside from 5-10 mins.

After 5-10 mins knead the dough and divide it into the small balls.

Coat lumps with dry refined flour and roll in to a round ball and press these balls to flatten it, the balls should be about 2.2 -2.5 inches in diameter.

Expand the flattened ball from the edges and prick it on both sides using a fork.

Now preheat the oil for frying

Fry the prepared potato mathri in medium hot oil on medium flame.

Keep flipping them while they fry to ensure they are golden brown on both sides.

Take the potato mathri out of the oil.

The potato mathri are now ready to be served.

Patato mathri serve with tea, coffee, tomato sauce and any chutney.

To store them for longer period them in an airtight container.
