A version of patatas bravas where I’ve modified the brava sauce to make it vegan and gluten-free.
Steps

Peel and slice the garlic, crush the cayenne chili, and finely chop the onion.

Heat a skillet over medium-low heat with extra virgin olive oil and sauté for about 7-8 minutes.

When the vegetables start to soften, add the tomato sauce.

Add a pinch of salt and the sweet paprika.

Cook everything together for 4-5 minutes, then transfer to a blender. Blend well and set aside.

Peel, wash, and cut the potatoes into medium-sized pieces.

Heat a skillet with plenty of vegetable oil over medium-high heat and fry the potatoes until golden and crispy. Place them on a plate lined with paper towels for a few minutes to drain excess oil.

Plate the potatoes and serve hot with the reserved sauce.
