Cooking Instructions

Add the dry ingredients of the egg yolk mixture to the egg yolk.

Add coconut milk while stirring continuously. Then add avocado oil and mix well.

Make the meringue: Pour the egg white into a mixing bowl and beat on high speed. Add monk fruit sweetener and continue beating until stiff peaks form.

Combine the pre-bake mix ingredients and mix well.

Pour the well-mixed cake batter into a 4-inch springform cake pan. Preheat the oven to 340°F (170°C) and bake for 15 minutes.

After removing the cake from the pan and letting it cool, place a frame around the cake to pour in the whipped coconut cream. You can use a mousse ring, but since I didn't have one, a cake frame works too.

To make the coconut whipped cream: Pour the coconut cream into a mug, add monk fruit sweetener, and whip on high speed. If you plan to eat it immediately, it's okay if the cream is slightly runny.

Pour the whipped cream into the cake mold and arrange the keto pearls on top. Done.

After 15 minutes, the cream will start to slide, and after 30 minutes, it will melt.
