Colourful capsicums & mini portobello mushrooms are best companions for any grilled meat! You can add zucchini , cherry tomatoes too to add colour and flavour.

Seasonings are endless possibilities- ranging from Italian or Mediterranean.

The basic combination is capsicums + zucchini + mushrooms + wet seasoning (Oil & lemon juice) with dry herbs, salt & pepper.

Marinate for minimum 30 min to a day in the refrigerator. Grill 15 -20 min and there you have it —- the ultimate juicy veg to pair with your grilled meats.

Ingredients

20 minutes
  1. 1red/yellow capsicum
  2. 1green capsicum
  3. 200 gmini portobello mushrooms
  4. 3 tbsOlive oil
  5. 3 tbslemon juice
  6. Dried herbs (oregano/basil/Italian)
  7. Garlic powder
  8. Salt & Pepper

Steps

20 minutes
  1. 1

    Chop capsicums and mushroom to equal sizes. Put them into a ziploc bag.

  2. 2

    Add the other seasoning into the ziploc bag. Give it a good shake.

  3. 3

    Put bag into the refrigerator- minimum 30 min to a day.

  4. 4

    Skewer the pieces alternating between the capsicum and mushroom. The skewers need to be pre-soaked in water ~30min to prevent getting burnt during grilling.

  5. 5

    Grill 15-20 minutes depending on the amount of veg. Turning once.
