I had missed Matumbo so much. I decided to cook some for my family. Yummy 😋

I had missed Matumbo so much. I decided to cook some for my family. Yummy 😋
Steps

Wash the Matumbo well and let them drain excess water. (You can wash with salt to remove smell)

Mix well then cover for the tomatoes to soften.

Chop into small pieces and boil with garlic and salt for some minutes till soft or tender (they talk time to soften)

Drain excess water and keep aside.

In a non stick pan, add the tripe and fry for some minutes then add cooking oil.

You can fry till crunchy if you want. Then add onions then tomatoes

Let it cool abit and serve with kienyeji vegetables and Ugali. Yummy
