I. To make the sauce:

Place all the sauce ingredients in a blender and blend until smooth. Strain the sauce into a large bowl so you can dip the pambazo rolls.

Cook the chorizo or longaniza with the potatoes in a skillet until the potatoes are cooked through (add a little oil if needed). Adjust seasoning and drain any excess fat.

Slice the pambazo rolls, dip them in the guajillo sauce, and fry them in a skillet with oil (be careful, as the hot oil may splatter).

Once ready, fill them with lettuce, the chorizo and potato mixture, crema, cheese, and green salsa.
