  2. 6egg yolks
  3. 3/4 cupsugar (150 grams)
  4. 3 tablespoonscornstarch (25 grams)
  5. Peel of 1/2 lemon
  6. 4 tablespoonssugar for caramelizing

    Mix the sugar and cornstarch, then whisk together with the egg yolks in a heavy-bottomed saucepan until the mixture is frothy.
