Mix the sugar and cornstarch, then whisk together with the egg yolks in a heavy-bottomed saucepan until the mixture is frothy.

Pour in the boiling milk along with the lemon peel, and stir constantly over low heat until the custard thickens.

Pour the custard into individual ramekins, sprinkle sugar on top, and caramelize the sugar with a kitchen torch or broiler. Enjoy!
