Homemade Mayonnaise

This mayo is slightly sweet because we love it that way. You can decrease the amount of sugar or honey in this recipe and add garlic, black pepper, etc. for unique flavor.

Keep in sterilized jar in the fridge. This mayo should last for weeks in the fridge, but we usually finish one jar in a week or so.

If you want thicker mayo, add more oil.

Ingredients

300-350 ml
  1. 2egg yolks
  2. 1 tbspmustard
  3. 1 1/4 cupoil (use flavorless oil like sunflower seeds or canola)
  4. 1 tspsalt
  5. 1/2 tspvinegar
  6. Juice from 1/2 lemon
  7. 2 tspsugar
  8. 2 tbsphoney

Cooking Instructions

    Whisk egg yolks with mustard. When the mixture becomes thick, add 1/4 cup of oil, pouring slowly while whisking.

    Add salt, vinegar, lemon, sugar, honey. Whisk again.

  3. 3

    Whisk while pouring the rest of the oil slowly. Adjust the taste if necessary.
