STUFFED BITTER GOURDS or BHARWAN KARELE

Healthy and yumm stuffed bitter gourds cooked in mustard oil in an iron skillet are my all time favorite.❤
I know many people hate karela bcoz of it's bitterness.
But anyone who doesn't like karela can have these stuffed karelas. I'm sure you would love it.

Peel the bitter gourds properly. Slit them lengthwise on one side.Rub salt all over them and keep aside for an hour.

Meanwhile heat 1 tbsp oil in a wok. Put grinded onions in it and fry till it's raw smell goes. Now add grated raw mangoes saute for a minute and add turmeric powder, coriander powder,fennel powder, red chilli powder and salt. Mix well and turn the heat off.

Let this mixture come to room temperature.

After an hour wash the bitter gourds properly and squeeze them to remove the water.

Now stuff them with the prepared mixture.

Heat 4 tbsp oil in a large and heavy bottomed skillet and put all the stuffed karelas over it. Cook for a minute on high heat then turn and reduce the heat to sim. Let them cook on sim(stirring in between) till karelas get tender and golden brown in colour.

Turn off the heat.

Our stuffed bitter gourds or bharwan karele are ready to serve.

Serve them with lachcha paratha, rice and daal or tava roti. Choice is yours.
