This is easy to throw together after a day at work. Sometimes I swap the prawns for 80g diced chorizo which gives a lovely flavour! Far less faffy than a traditional risotto (but may offend a risotto connoisseur!)

This is easy to throw together after a day at work. Sometimes I swap the prawns for 80g diced chorizo which gives a lovely flavour! Far less faffy than a traditional risotto (but may offend a risotto connoisseur!)

Dice your onion and slice your streaky bacon into 1 cm chunks.

Fry both together in a splash of oil (if not using a non stick pan) until they start to brown, stirring regularly. Use a high heat.

Pour in your risotto rice, and coat in the bacon and onion to absorb the flavours. Once fully coated, pour in your stock and bring your liquid to the boil. Once you have reached the boil, turn the heat down and allow to simmer, stirring regularly. The stock will soak into the rice.

Once you think you are about 5 minutes from the end, add your peas and prawns and heat through.
