Well, this recipe comes from my late mother and it's a very good recipe for anyone who wants to try a baked pork leg that's very, very tender.... It might seem like the ingredients don't match (because of the ham and bacon), but I assure you it's a very, very good flavor.

Buy the leg boneless and without the outer skin, then strain the orange juice to remove all pulp.

Add ground black pepper and garlic salt to the orange juice to taste. Inject this fine juice into the leg all over several times so the juice tenderizes the meat inside. Inject repeatedly until you see the juice coming out from other parts of the meat. Then, place the leg in a container to marinate in the orange juice with garlic salt and pepper overnight in the refrigerator.

The next day, take out the leg and use a knife to make several holes all over to stuff it with the other ingredients. You can make long cuts in the leg, but be careful not to cut through from the surface to the bottom, or the juice will leak out from the bottom.

Once the holes or cuts are all over the leg, proceed to stuff it with the other ingredients. In a container, mix the raisins, bacon cut into pieces to taste, ham, almonds, and walnuts.

Place the leg in an aluminum tray without the orange juice. Once stuffed, sprinkle with garlic salt and pepper, cover with plenty of butter, and bake at 330°F for 6 hours, depending on the oven being used.

Then take the mixture of those ingredients and gradually insert them into the areas where we made the cuts with the knife. If possible, it's advisable to stuff it until the leg deforms from the amount of filling.

At this point, check on the leg. You can uncover it from the aluminum foil and see how it's cooking. After about 6 or 7 hours, the leg is cooked inside and out. Once the leg is cooked and not dry because it's basted in the same butter, you'll see the results when you insert a knife to check the tenderness of the meat............That's where you'll see the tenderness of the leg and its flavor.

Cover well with aluminum foil and leave it in the oven for the estimated time. After several hours, it will start to smell delicious....
