This is a South African dessert, which is slightly spongy and sticky in texture. They are usually served hot with cream sauce or custard or cold with ice cream. I have made a regular custard.

Preheat the oven to 180 c. Grease cupcake pan.

Beat the eggs and sugar together until pale yellow. Add the jam and mix through

Melt the butter and add it to vinegar and wet mixture

In a separate bowl whisk together the flour, soda and salt
- 5
Once the cake is done, poke holes in the cake and pour the sauce to top of hot cake.

Add the dry ingredient to wet alternating with milk.

Pour to greased pans and bake for 20-30 minutes until golden brown edges.

Meanwhile prepare custard. Boil the milk with sugar. In another bowl mix custard power to 4tbsp milk. When the milk boils add the custard powder milk mixture and keep stirring until lump free.

Take the cake out. Poke holes and pour custard over the hot cake.

Let it sit for 1 hour and get soaked.

Serve it warm or cold with ice cream or more custard.
