Bangladesh is the fourth-largest rice producer in the world.In the process of rice production it creates lots of broken rice (khud), so there are few recipes with khud (broken rice) which is less expensive than rice.For that reason khud (broken rice) is more popular among poorer consumers.
This typical recipe is specially served with Bhorta, dal chochchori, dim bhaja(egg omlet) etc.
Now The most important khud (broken rice) is not that available in your Country like other rice.So if you don’t have khud (broken rice), soak any Aromatic rice (still I prefer Bangladeshi chinigura or kalijeera rice)1 hour and break it with your hand to get your home made khud(broken rice).

Wash the rice properly and soak it with clean water for half an hour.Then drain it from water and keep the rice aside.Take a pan, put some oil into it and heat it on the stove. Then put cardemom into oil.After 1 minutes frying, put chopped onions and 5-6 pieces of green chillies into it and fry untill onions turn lite brown in colour.

Now put ginger and garlic paste and salt as required.keep frying. After 3 minutes frying,put rice into it.Fry the rice in a low to medium flame for 15 minutes.

Now put 1.5 litre water into the rice. Cover it and cook.When the rice is 100% cooked, stop the flame immediately.

Broken rice is Ready.Serve it with many spicy bharta, chorchori, dim vaja(Egg Omlet)etc. and enjoy.
