Steps

Heat oil in a pan and add mustard seeds, garlic and curry leaves

Add finely chopped onions with ginger garlic paste and sauté it till the onions are slightly cooked

Add chopped carrots and all the dry masalas. I have added extra red chilli because carrots are generally sweet

Mix it well and let it cook for some time

Sprinkle some water if required
- 6
Once cooked your veggies are ready to be served
