While the rice noodles are cooking, drain the block of tofu and wrap it in paper towel. Place on a plate and press gently to squeeze out excess liquid. Discard the paper towel. Dice the tofu into cubes and place into a bowl. Pour soy sauce over the tofu, about 1 inch deep. Toss the tofu to coat it in the soy sauce. Set aside.

Cook any of your veggies that need to be cooked/softened for a few minutes at the bottom of a large pot. Add the tofu and cook for a few more minutes. Pour in the vegetable broth and noodles. Add soy sauce to the soup until it become salty enough for your taste.
