Gather sooji, curd and salt at one place

In a mixing bowl combine together sooji and salt, then add curd and mix well with a spoon
- 3
Now take some water and add it to the sooji, curd mixture. Mix well so that there are no lumps remain, cover and keep it for half an hour to rest

After half an hour put enough water in a big vessel for steaming. Now take fruit salt and 1 tbsp oil, add oil and fruit salt to the batter

Mix well immediately, take a greased thali and pour half of the batter in it, tap the thali so that it spreads evenly

Now add the created beetroot to the remaining batter, mix well and pour the batter on the white batter and place the thali in the big vessel

Cover and steam for 15 minutes, then switch off the gas and remove the lid
- 8
Take out the thali from the vessel and cut the dhokla into diamond shape pieces, take out the diamond shape pieces from the thali
- 9
Now heat 1 tbsp oil for tadka, add rai, white sesame seeds, let them splutter, then add chopped green chillies and curry leaves, roast them for few seconds

Now add the dhokla pieces to the tadka, add some chopped coriander, mix well, but very gently, roast for 2 minutes, the double decker dhokla is ready to serve
