Grandma Liem’s Pastel Tutup (Indonesian Cottage Pie) Recipe

Pastel Tutup is an Indonesian dish inspired by Dutch/European dish. Similar concept to British cottage pie or Dutch ovenschotel, but with different filling.
This is my grandma (Oma Liem)’s recipe, provided kindly by my Aunty Bwee. The measurements and timing are all my approximation. Because as all good Indonesian food recipes, there is no such thing as exact measurement!
Grandma Liem’s Pastel Tutup (Indonesian Cottage Pie) Recipe
Pastel Tutup is an Indonesian dish inspired by Dutch/European dish. Similar concept to British cottage pie or Dutch ovenschotel, but with different filling.

Cooking Instructions

Steam or boil the potatoes (and/or celeriac if you like) then mash it with a touch of butter. If you like creamier mash add milk as you like.

Stir fry the chopped onion and shallots until soft. Add the cubbed carrot, meat (or vegetarian substitute), peas (if use tinned pea, add this last), mushroom. Add the glass noodle and season with salt, pepper and nutmeg (if using). Pour stock. If you want it creamy, add a few spoonful of milk or corn flour mixed with water. Add the chopped herbs (parsley/chives)

Transfer the filling into an oven proof dish. If using boiled egg, arrange the quartered eggs on top.

Cover with mash potato. Brush with egg and sprinkle some grated cheese.

Bake in the oven 190-200C for 30-40 minutes (until the top is golden brown).

Serve with salad (if you like), mayonnaise and (if you have Indonesian taste) chilli sauce (Sambal ABC or sriracha).

This is the other Irish dish for St. Paddy's Day that I was talking about. Well, technically, not really an Irish dish tho. I don't eat lamb (I am using chicken), so to call this a Shepard's Pie is like putting pineapples on pizzas. I definitely do not wanna offend any Irish people. Anyway, this recipe is inspired by the wonderful Gizzi Erskine. Pls, pardon my bad photoshoot as it starting pouring with dim lighting and you know how much I depend on natural lighting.I am not a fan of pie pastry crust, which is the reason why you hardly find any pie recipe on this webbie. But there is something wonderful about the pies in the U.K.; mashed potatoes are used as some sort of crusts. How wonderful is that? And what Gizzi did really blew my mind; she used cauliflower mashed instead! We know how "heavy" mashed potatoes are. And cauliflower mashed adds that sorta lightness as well as some floral aromatics to the dish. That ras el hanout really gives the whole dish an extra omph. So, kudos Gizzi!I am using lots of carrots, mushrooms and leeks for this pie. The finely blitz mushrooms add an extra ooey texture as well as an umami note to the dish. You can change the vegetables around. Onions, celery, squash and parsnips are really a great alternative combination. You can of cos use lamb of cos and call this shepherd's pie too. I actually intended to create an elegant slice of this pie, and I almost forgot that this is a hearty rustic dish that doesn't need any artsy plating. Daniel Lim -

I always called this shepherd’s pie but technically it’s not shepherd’s pie because there’s no lamb in it. This is my version of cottage pie with ground beef, sausage, and vegetables. I serve it in individual ramekins that are deep, topped with my homemade mashed potatoes but it can be put into one dish and then served in individual portions. fenway -

It’s like Shepherds Pie (which is made with ground lamb) but made with ground beef. Enough here for 2 casseroles - one for tonight and one to freeze for a later date. There are some cheats - I use Costco mashed potatoes (doctored up) for the topping but feel free to use fresh mashed potatoes.
